I'm excited to share my experiences with you! 😊With over 20 years of leadership experience in the restaurant and hospitality industries, I've developed a love for traveling and exploring new places. I have a long name: Nicholas Daniel Lichanos Cochrane (two middle names - I know, I'm lucky right?!) Anyhow, people usually call me Nick, Nicky, Dan, Daniel, or 'Professor' most of the time.(I'll get to the "Professor" thing in a sec) When I searched on google for Nick Cochrane I found many awesome people that would show up with that name, and often I was not one of them. So I chose for my business to use my two middle names - Daniel Lichanos, because it was much more unique. After starting my business, it was not long before I started "googling" Daniel Lichanos and I was the first one that popped up - how fun!
I've been documenting my adventures through fun videos, blog posts, and even report cards (because who doesn't love those, right?). Oh, and as I mentioned - I'm also a Business Professor! I teach courses on Management, Leadership, Business Ethics, Customer Relations, Entrepreneurship, Macroeconomics, Operational Systems, and Organizational Behavior.
I'm a proud alumnus of University of Massachusetts Lowell, where I earned my Master's in Business Managment, my Bachelor of Science in Management and Leadership, and I also graduated with an Associate's in Business from Northern Essex Community College. As a self-proclaimed foodie, I've always had a passion for indulging in delicious dishes. But my love for food took a dangerous turn when I found myself tipping the scales at over 400 pounds. It wasn't until I fell ill with a severe case of food poisoning that I realized the true impact of my eating habits.
After a year of grueling medical procedures and the loss of 200 pounds, I emerged a changed person. While I was grateful to have recovered, my digestive system had been permanently altered. I was now lactose intolerant, meaning I could no longer enjoy the dairy-filled delights that had once been a staple in my diet. My life was forever changed, but I refused to let my new dietary restrictions hold me back. I dove headfirst into researching and asking questions about every food I consumed to ensure it was dairy-free.
And now, whether you're lactose intolerant like me, have family members who are, or are simply curious about this lifestyle change, I'm thrilled to have you along for the ride. Let's explore the delicious world of dairy-free cuisine together!
